The perfect savory start to 2024 is André’s Alpine Quiche, a seasonal treat and annual collaboration with local cheesemaker Green Dirt Farm, featuring their alpine-style Aux Arcs cheese, a blend of cow and sheep’s milk. 

The cheese itself is creamy with a hint of sweetness, something André’s describes as having notes of pineapple and flowers, and the quiche is filled with a unique blend of blanched cubed potatoes, caramelized onions, and roasted apples.

A hearty, filling dish perfect for the coming winter days, the quiche is inspired by the traditional Swiss dish Älplermagronen, a comfort food recipe sometimes known as herdsman’s macaroni. 

The decadent and creamy quiche is available through February while supplies last.
